What size single fin should I use?

As a rough starting point, longer boards often use longer fins. Tune from there based on whether you want more hold, more pivot or easier release.

Do single fins include the screw and plate?

Not always. Check the product listing and add a screw and plate if your board does not already have one.

What is a 2+1 setup?

A 2+1 uses a centre single fin plus two smaller side bites. It adds control and bite while keeping a smoother longboard or mid-length feel.
